Fruit of the Month: Limes!

The perfect month for Limes; Just as the weather grows warmer and we start to yearn for refreshing foods and beverages.  As a kid, I remember drinking lemonade, but I also remember drinking limeade and loving it.  There was just something "different" about the taste of limes...almost more refreshing.  I'm sure the mention of limes also makes some think of Corona, Margarita's, Gin & Tonics and especially Mojitos and there's nothing wrong with that (in moderation, of course, as I'm professionally obligated to state).  Where nutritional benefit is concerned, limes are loaded with vitamin C, being a citrus fruit, benefiting the immune system.  They are also a great natural salt substitute that can be used to add flavor.  There are plenty of wonderful recipes involving limes, both for food and beverage.  Here are two fabulous ones:
  
"Virgin" Mojito
  • 1 large handful of mint leaves
  • Juice from 1 fresh lime
  • Ice (1/2 glass)
  • Agave Nectar or Stevia to taste
  • 6 oz Soda Water or Seltzer
In a pint glass, crush/muddle mint leaves, add ice and remaining ingredients, stir and enjoy.  Note...you can of course add light rum and make it a non-virgin mojito.
